Ingredients
- 12 oz salmon
- 1 cup sweet potato
- 1 tbsp olive oil
- 1 tbsp garlic
- 1 tsp paprika
- 2 tbsp lemon
- 1 cup broccoli
Instructions
- Preheat air fryer to 400F.
- Cube sweet potato, toss with half the oil and paprika, air fry 10 min.
- Pat salmon dry, rub with remaining oil, minced garlic, salt, and pepper.
- Add salmon and broccoli florets to the basket, cook 8-10 min until salmon flakes.
- Finish with a squeeze of fresh lemon and serve.
Meal prep & storage
You can cube the sweet potato and pat the salmon dry up to a day ahead, storing each in a sealed container in the fridge. Cooked leftovers keep well in the fridge for up to 3 days, or freeze the salmon on its own for up to 2 months. Reheat in the air fryer at 350F for 3 to 4 minutes to bring back the crisp edges, and add a fresh squeeze of lemon before serving.
Swaps
Swap the salmon for trout, arctic char, or thick cod fillets and adjust cook time until the fish flakes. Sweet potato can be traded for Yukon gold potato or butternut squash cubes, and broccoli works just as well as cauliflower florets or green beans. If you're out of fresh garlic, a teaspoon of garlic powder rubbed into the salmon does the job.
