Ingredients

  • 16 oz chicken breast
  • 2 cup chickpeas
  • 1 cup quinoa
  • 2 cup cucumber
  • 2 cup cherry tomatoes
  • 1/2 cup feta cheese
  • 3 tbsp olive oil
  • 2 tbsp lemon juice

Instructions

  1. Cook quinoa per package and let cool.
  2. Season diced chicken with salt, pepper, oregano; sear until cooked through.
  3. Toss chickpeas with 1 tbsp olive oil and roast at 425F for 20 minutes.
  4. Chop cucumber and halve cherry tomatoes.
  5. Divide quinoa, chicken, chickpeas, and veggies into 4 containers.
  6. Top with feta, drizzle remaining olive oil and lemon juice, seal and refrigerate.

Meal prep & storage

Cook everything in parallel: get the quinoa on first, roast the chickpeas while the chicken sears, then chop the veggies during the last few minutes. Sealed containers keep well in the fridge for up to 4 days, and these bowls are best enjoyed cold or at room temperature so no reheating is needed. If you do want it warm, microwave the quinoa and chicken for about 90 seconds before adding the fresh veggies and feta on top.

Swaps

Swap the chicken for seared shrimp, ground turkey, or extra chickpeas for a plant-forward version. Farro or couscous work in place of quinoa if that is what you have on hand, and crumbled goat cheese subs in nicely for feta. For a dairy-free bowl, skip the cheese and add a spoonful of hummus or a handful of olives for that same salty, creamy finish.
