Ingredients

  • 8 oz eggs
  • 1 cup greek yogurt
  • 8 oz turkey sausage
  • 2 cup spinach
  • 1 cup bell pepper
  • 1/2 cup cheddar cheese
  • 2 tbsp chives

Instructions

  1. Preheat oven to 350F and grease four wide-mouth jars or ramekins.
  2. Brown crumbled turkey sausage in a skillet, then set aside.
  3. Whisk eggs with Greek yogurt until smooth and fluffy.
  4. Chop bell pepper and spinach; divide with sausage and cheddar into jars.
  5. Pour egg mixture over, top with chives, and bake 22-25 minutes until set.
  6. Cool, lid, and refrigerate up to 4 days. Reheat 60 seconds and go.
