Air Fryer Steak Bites are the kind of dinner you can pull together on a Tuesday night without breaking a sweat. Juicy sirloin cubes get a quick toss in garlic and paprika, then crisp up in the air fryer while you throw together a side. It's fast, satisfying, and packs serious protein into every bite.
About 20 minutes start to finish, including cubing and seasoning the steak.

Ingredients
- 16 oz beef sirloin
- 1 tbsp olive oil
- 1 tbsp garlic
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp parsley
Instructions
- Cube sirloin into 1-inch pieces and pat dry.
- Toss with olive oil, minced garlic, paprika, salt, and pepper.
- Air fry at 400F for 7-9 minutes, shaking halfway.
- Top with chopped parsley and serve hot.
Meal prep & storage
Double the batch and stash portions in airtight containers in the fridge for up to 3 days, or freeze for up to 2 months. To reheat, pop the bites back in the air fryer at 350F for 2-3 minutes so they stay tender instead of turning rubbery in the microwave. If you're prepping ahead, hold off on the parsley and add it fresh when serving.
Swaps
Sirloin is the sweet spot for tenderness and value, but ribeye, strip steak, or even cubed chicken thighs work with the same seasoning and cook time (adjust a minute or two for chicken). Swap olive oil for avocado oil if you want a higher smoke point, and fresh minced garlic can be replaced with 1 teaspoon garlic powder in a pinch. Cilantro or chives make a nice stand-in for parsley if that's what you have on hand.
