Ingredients

  • 20 oz chicken breast
  • 1 cup quinoa
  • 2 cup cherry tomatoes
  • 2 cup cucumber
  • 1/2 cup feta cheese
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cup spinach

Instructions

  1. Cook quinoa in 2 cups water until fluffy, about 15 minutes.
  2. Season chicken with salt, pepper, oregano and sear 6 minutes per side; slice.
  3. Dice cucumber and halve cherry tomatoes.
  4. Whisk olive oil with lemon juice for a quick dressing.
