Ingredients

  • 1 1/2 cups cottage cheese
  • 1 cup sweet potato
  • 1/2 cup kimchi
  • 1/2 cup avocado
  • 1 cup cucumber
  • 1 tbsp olive oil
  • 1 tsp everything bagel seasoning

Instructions

  1. Cube sweet potato, toss with olive oil, and roast at 425F for 25 minutes.
  2. Slice cucumber and avocado.
  3. Divide cottage cheese between two bowls.
  4. Top with roasted sweet potato, kimchi, cucumber, and avocado.
  5. Finish with everything bagel seasoning.
