These Air Fryer Cottage Cheese Egg Bites are a soft, savory grab-and-go breakfast that comes together in one bowl. Cottage cheese keeps the texture custardy while feta, spinach, and bell pepper add pops of color and flavor. Make a batch on Sunday and breakfast is handled for days.

Meal prep & storage
One batch makes 3 servings (roughly 6 bites), and you can easily double it if your air fryer has room. Store cooled bites in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months with parchment between layers. Reheat in the air fryer at 300F for 2-3 minutes, or microwave for 20-30 seconds until warmed through.
Swaps
Swap feta for goat cheese or shredded sharp cheddar to change the flavor profile while keeping that salty bite. Kale or chopped broccoli work well in place of spinach, and diced mushrooms or sun-dried tomatoes can stand in for the bell pepper. If you prefer a smoother texture, blend the cottage cheese with the eggs before mixing in the vegetables.
